  • 1/2 cup melted butter
  • 1/4 cup granulated sugar
  • 24 ounces softened cream cheese
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine 2 cups of crushed gingersnap cookies with 1/2 cup of melted butter and 1/4 cup of granulated sugar. Mix until the crumbs are well coated.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan and bake for about 10 minutes. Remove it from the oven and let it cool while you prepare the filling.
  4. In a large mixing bowl, beat 24 ounces of softened cream cheese with 1 cup of granulated sugar until smooth and creamy.
  5. Add in 1 cup of sour cream, 1 teaspoon of vanilla extract, and your choice of spices (1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, and 1/2 teaspoon of ground ginger). Mix well.
  6. Add 3 large eggs, one at a time, beating just until combined. Avoid overmixing to prevent cracks.
  7. Pour the cheesecake filling over the cooled crust in the springform pan.
  8. Bake in the preheated oven for about 50-60 minutes, or until the edges are set but the center still has a slight jiggle.
  9. Turn off the oven and crack the door, letting the cheesecake cool gradually to prevent cracking.
  10. Once cooled to room temperature, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
