Instructions

  1. Begin by preparing your garlic scapes. Wash them under cold water, then trim the ends and chop into 1-inch pieces. This will help them blend smoothly into the hummus.
  2. In a food processor, combine the cooked chickpeas, chopped garlic scapes, tahini, fresh lemon juice, olive oil, minced garlic (if using), ground cumin, smoked paprika, salt, and pepper. Pulse the mixture until it starts to come together, about 30 seconds.
  3. Next, scrape down the sides of the food processor with a spatula to ensure everything is blended evenly. This is key to achieving a creamy texture. Pulse again for another 15-30 seconds.
  4. If the mixture is too thick, slowly add water, one tablespoon at a time, while the processor is running. Blend until the hummus reaches your desired consistency — it should be smooth and creamy. Aim for a texture that’s thick enough to hold its shape but smooth enough to spread easily.
  5. Taste the hummus and adjust the seasoning as needed. If you feel it needs more acidity, add a bit more lemon juice. If it tastes flat, a pinch more salt can elevate the flavor. Pulse again to mix any adjustments.
