  • 1 teaspoon salt
  • 1 package active dry yeast (2 ¼ teaspoons)
  • ½ cup milk
  • ¼ cup water
  • 3 tablespoons unsalted butter, melted
  • 1 egg
  • 1 ripe banana, mashed
  • ⅓ cup granulated sugar (for the filling)
  • 2 teaspoons ground cinnamon
  • ¼ cup unsalted butter, softened (for the filling)
  • 1 banana, sliced (for the filling)
  • 1 cup powdered sugar (for the glaze)
  • 1 teaspoon vanilla extract (for the glaze)
  • 23 tablespoons milk (for the glaze)

Instructions

  1. In a large bowl, combine 1 cup of flour, sugar, salt, and yeast. Mix well to ensure even distribution.
  2. In a small saucepan, heat the milk, water, and melted butter until warm, about 110°F.
  3. Pour the warm liquid into the flour mixture. Stir until combined, then add the egg and mashed banana. Beat until smooth.
  4. Gradually add the remaining flour, half a cup at a time, mixing until the dough starts to pull away from the sides of the bowl.
  5. Transfer the dough to a floured surface and knead it by hand for 5-7 minutes until it becomes smooth and elastic.
  6. Place the kneaded dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for about 1 hour or until it has doubled in size.
  7. While the dough rises, prepare the filling by mixing together the sugar and cinnamon in a small bowl.
  8. Roll the risen dough into a rectangle about 15×9 inches on a floured surface.
  9. Spread the softened butter evenly over the dough, then sprinkle the cinnamon sugar mixture on top, followed by the sliced banana.
  10. Starting from the longer side, carefully roll the dough into a log. Slice the log into 12 equal pieces.
  11. Place the rolls in a greased 9×13 inch baking pan, leaving a little space between each roll. Cover the pan and let them rise for another 30 minutes.
  12. Preheat your oven to 375°F while the rolls rise. Bake for 25-30 minutes, or until they turn golden brown.
  13. While the rolls are baking, whisk together the powdered sugar, vanilla extract, and milk in a bowl until smooth.
  14. Remove the rolls from the oven and let them cool slightly. Drizzle the glaze generously over the warm rolls before serving.
