Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together 1 cup of softened unsalted butter and 1 cup of powdered sugar until light and fluffy, about 3-5 minutes.
  3. Mix in the zest of 2 lemons and 2 tablespoons of fresh lemon juice, along with 1 teaspoon of vanilla extract, and beat until well combined.
