Savory BLT Chicken Sliders

These BLT Chicken Sliders are a delightful twist on a classic favorite, featuring tender grilled chicken, crispy bacon, and fresh veggies. Topped with a creamy honey-mustard aioli, they are perfect for any gathering.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 lb total) (pounded to 1/2-inch thickness)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 8 slices bacon (cooked until crispy)
  • 12 slider buns (brioche or Hawaiian rolls recommended)
  • 1 cup shredded lettuce (iceberg or romaine)
  • 2 Roma tomatoes (thinly sliced)
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp lemon juice (freshly squeezed)
  • 1 clove garlic (minced)

Instructions

  1. Pound the chicken breasts to an even ½-inch thickness. This step is crucial as it ensures even cooking. Use a meat mallet or rolling pin, and cover the chicken with plastic wrap to prevent splatter.
  2. In a small bowl, mix together the garlic powder, paprika, salt, and black pepper. This spice blend will infuse the chicken with flavor. Make sure to coat both sides of the chicken evenly with the mixture.
  3. Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken. Cook for 4-6 minutes on each side until golden brown and the internal temperature reaches 165°F. Avoid overcrowding the pan; cook in batches if necessary.
  4. Remove the chicken from the skillet and let it rest for 5 minutes. Resting allows the juices to redistribute, keeping the chicken moist. Slice the chicken into pieces that fit the slider buns.
  5. While the chicken is resting, cook the bacon in a separate skillet over medium heat until crispy, which should take about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess grease. Break each slice in half for the sliders.
  6. In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, and minced garlic until smooth. This homemade aioli is the star of the show, so ensure it's well combined.
  7. If desired, toast the slider buns in the same skillet until lightly golden. This adds a lovely crunch and prevents sogginess when adding the aioli and toppings.
  8. Assemble the sliders: Spread a generous amount of the honey-mustard aioli on both the top and bottom buns. Place a piece of cooked chicken on the bottom bun, top with crispy bacon, a slice of tomato, and a handful of shredded lettuce.
  9. Finish with the top bun and serve immediately. The sliders are best enjoyed fresh, but they also hold up well for a few hours if kept properly.

Keywords: To prevent overcooking the chicken, use a meat thermometer. Remove the chicken from the heat as soon as it hits 165°F for perfectly juicy results.
