  • 1 cup (240 g) sour cream
  • 1 cup (240 g) guacamole
  • 1/2 cup (120 g) sliced jalapeños (pickled or fresh)
  • 1/2 cup (80 g) diced red onion
  • 1/2 cup (80 g) fresh cilantro leaves, chopped
  • Lime wedges for serving

  • 12 soft tortillas (flour or corn, depending on preference)
  • 12 hard taco shells (optional, for variety)
  • For Additional Sides (Optional):
  • 1 can (15 oz or 425 g) black beans, rinsed and drained
  • 1 can (15 oz or 425 g) corn, drained
  • Tortilla chips for dipping

Instructions

  1. Begin by heating 1 tablespoon of olive oil in a large skillet over medium heat. Allow the oil to shimmer, which takes about 1-2 minutes. This step is crucial for preventing the ground beef from sticking.
  2. Add 1 small finely chopped onion to the skillet and sauté for 3-4 minutes until translucent and fragrant. Stir occasionally to ensure even cooking. Avoid browning the onions too much, as they should be soft but not caramelized.
  3. Next, stir in 2 minced cloves of garlic and cook for an additional 30 seconds. You’ll know it’s ready when you can smell that delightful garlicky aroma wafting through the kitchen. Be careful not to burn the garlic, as it can turn bitter.
