- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 mango, diced
- 2 cups cabbage, shredded
- 1 red bell pepper, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons honey
- 1 lime, juiced
- Salt and pepper to taste
- Preheat your grill: Set it to medium-high heat (about 400°F). You want a hot grill to get those beautiful grill marks and to cook the chicken quickly.
- Prepare the chicken: In a bowl, rub the chicken thighs with 2 tablespoons of jerk seasoning mixed with 1 tablespoon of olive oil until well-coated. Make sure every surface is covered to maximize flavor.
